Pastel desserts can become flat when both the object and the light are soft. The solution is not necessarily more contrast everywhere. Use one directional source, preserve a darker edge and expose for the brightest icing or sugar surface.
Choose one main direction
Place the dessert beside a window or large diffused light so illumination travels across the surface. Side light reveals piping ridges and crystal relief. Slight backlight can brighten translucent details, but it may erase a pale icing edge against a white background.
Turn off conflicting room lights when accurate color matters. Mixed color temperatures can make the plate neutral in one area and yellow or blue in another.
Diffuse before adding fill
A translucent curtain or photographic diffuser can soften a hard patch of sun. Once the main source is controlled, use a white card opposite it to return detail to the shadows. Move the card gradually and watch the icing contour.
Too much fill removes the direction that reveals texture. Preserve at least one gentle shadow transition instead of making every face equally bright.
Manage gloss and pale edges
Smooth icing and hard candy can reflect the camera, clothing and room. Simplify the area around the set and use neutral cards to shape the reflection. A narrow dark card just outside the frame can restore an edge to a glossy pale object.
Check the histogram or highlight warning if available. Texture that clips to pure white cannot be recovered reliably, even if the overall image looks pleasantly bright on the camera screen.
Keep the edit faithful
Set white balance from a neutral reference captured under the same light. Adjust global color cautiously, and compare the final file with the actual dessert. Editing should not materially change a product’s color or hide relevant condition when the image represents a real item.
